Stay at the new Hotel Sanders (hygge and not too Scando austere) and hop on the loaner bikes to cruise around Copenhagen. Pop into boutiques on Jægersborggade, go for smørrebrød at old-school Restaurant Schonnemann, and definitely have dinner at Manfreds. Next, catch a two-hour flight on SAS to the Faroe Islands, 18 volcanic isles halfway to Iceland, and check into Hotel Foroyar. Spend days hiking, island hopping (most are connected by bridges and tunnels), and ogling the insane number of sheep and puffins that inhabit this bright green archipelago. If you're there in the (surprisingly mild) winter, look for the northern lights.

At London's recently revamped Bloomsbury Hotel, it's tempting to park it in the lobby's sexy Coral Room Bar, but then you'd miss touring the eclectic collection at the Sir John Soane's Museum and going for dinner at the gorgeous Spring restaurant. On the weekend, explore Maltby Street Market, an under-the-radar pop-up with some of the best food in London. Rent a car or take the train an hour south to Gravetye Manor, a 16th-century estate that's now a luxury hotel with mullioned windows and stone fireplaces, surrounded by acres of gardens and woodlands. Wander the grounds, nap by the lake, and eat at the hotel's Michelin-starred restaurant.

There's no completely escaping the throngs of tourists in Florence, but you'll get a little reprieve if you stay at the elegant Ad Astra hotel, which overlooks the Giardino Torrigiani, Europe's largest private city garden. You'll do the west side next time. This go-round, stay with the cool kids in DTLA. Base yourself at the new NoMad Los Angeles hotel, a restored 1920s building with a hopping rooftop pool and bar scene, and a restaurant from superstar chef Daniel Humm. You're a short walk to the superb contemporary art museum, the Broad, and all the great food stalls at Grand Central Market (change your life with a breakfast sammy from Eggslut). Next, rent a car-ideally a convertible, to live the SoCal fantasy-and drive north along the ocean for about an hour on the PCH to Malibu. Check into the dreamy Surfrider Malibu across from the iconic Surfrider Beach, take a surf lesson, hang out on the beach, and go for super fresh fish tacos at the no-frills Malibu Seafood. Then watch the sunset while eating Cali's best veg-forward cooking at Malibu Farm Restaurant, right on the pier.
